Jacob Liquor Wine of the Week

Here is the list of wines we "tasted" last friday and wednesday morning. All of these are fantastic to go with turkey and all the trimmings for Thanksgiving :

Jeio - Sparkling Rose

2010 Pine Ridge- Chenin Blanc/Viognier Blend

2008 Layer Cake Primitivo- Italy's Zinfandel

Pennywise- Pinot Noir

Potato Soup!!

This is a simple recipe that is easy to custom how you want. The basic ingredients are:

1 1/2 sticks of butter

1 medium onion

1/2 cup green pepper

8 - 10 potatoes, peeled and cubed

1 can (13 oz ) evaporated milk

Saute the green pepper and onion in butter in deep pan until tender. Dump in potatoes fill with enough water to cover potatoes and boil until tender. Add evaporated milk, simmer until thickens. You can spice it up with salt, pepper,and garlic salt.

The nice thing about this recipe is you can add whatever you like to spice it up.

Here is another yummy recipe from the Tast of Home Fresh and Easy cookbook. This is so easy and good. Great with Spaghetti or Lasagne

Tarragon Cheese Loaf

1 loaf unsliced round bread ( I use Sour Dough )

1/4 cup butter softened

2 tablespoons minced fresh tarragon

1 cup shredded Monterey Jack cheese

2 cups shredded Parmesan cheese

Cut bread horizontally in thirds,remove top section and set aside. Spread butter over the bottom and middle sections. Sprinkle with tarragon and cheeses.

Reassemble loaf, wrap in foil. Bake 350 for 25 min or until cheese begins to melt. Let stand 5 min. Cut into wedges

I had the opportunity to be a " Guest Bartender " this past weekend at Benny's in Eureka. We took the moment to pose for the first installment of our 'Red Solo Cup' photo campaign. We thought it would be fun to take pictures at every gathering with people holding their Red Solo Cups. We encourage you to submit yours! This was a great night. The food at Benny's is fabulous! The atmosphere, spectacular! You should check it out sometime.

MEDITERRANEAN CHICKEN

4 boneless skinless chicken breast halves           1 pint grape tomatoes

1/4 teaspoon salt                                            16 pitted Greek olives, sliced

1/4 teaspoon pepper                                        3 tablespoons capers, drained

3 tablespoons olive oil

Sprinkle chicken with salt and pepper. In a large ovenproof skillet, cook chicken in oil over medium heat for 2 - 3 minutes on each side or until golden brown. Add the tomatoes, olives, and capers. Bake uncovered at 475' for 10 - 14 minutes or until a meat thermometer reads 170'

Taste of Home Recipe: KIWI SQUARES

KIWI DESSERT SQUARES
 
2 cups all - purpose flour
1/2 cup confectioners' sugar
1 cup cold butter, cubed
 
CITRUS GLAZE
6 tablespoons sugar
2 teaspoons corn starch
1/2 cup cold water
1/4 teaspoon orange extract
 
TOPPING:
2 packages (8 oz each) cream cheese, softened
2/3 cup sugar
1-1/2 teaspoons orange extract
4 kiwi, peeled
14 fresh strawberries, halved
 
In a large bowl combine flour and confectioners' sugar. Cut in the butter until crumbly. Press into a greased 15x10x1" pan. Bake at 350' for 16-19 minutes. Cool on rack
 
In a small sausepan combine sugar and cornstarch. Stir in water until smooth. Bring to a boil over medium heat., cook and stir for 2 minutes or until thickened. Remove from heat, stir in orange extract. Let cool completely.
 
In a large bowl beat the cream cheese, sugar and orange extract until smooth. Spread over crust and let cool at least 45 minutes. Cut into 28 squares.
Place a slice of kiwi in the middle of the squares, top each with a strawberry half. Brush with glaze and refrigerate until set

Taste Of Home Recipe

I got the new cookbook they are selling this year at the Taste of Home at Hartman arena on friday Oct 14th. It is going to be a lot of fun, get your tickets and join us, please!! Here is the recipe I made this morning for the boys. It is from the cookbook

Strawberries 'n' Cream Scones
 
2 cups all-purpose flour
1/3 cup plus 2 teaspoons sugar, divided
2-1/4 teaspoons baking powder
1 teaspoon grated lemon peel
3/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup cold butter,cubed
2/3 cup half and half cream
1/2 cup coarsely chopped strawberries
1 egg, lightly beaten
 
In a large bowl, combine the flour,1/3 cup sugar,baking powder,lemon peel,salt and cinnamon. Cut in butter until mixture resembles coarse crumbs.Stir in cream just until moistened
 
Turn onto a lightly floured surface. Knead 5 times.Gently knead in strawberries, about 5 times.Pat into an 8 inch circle, brush with egg and sprinkle remaining sugar. Cut into 8 wedges.
 
Separate wedges and place 2 inches apart on a greased cookie sheet. Bake at 425' for 9-12 minutes or until golden brown. Serve warm
